All of the Career & Technical Education classes relate to the world of work, students & their families, post-secondary education & training, respect, the real world, and hands on learning.   
Fundamental Chef Training class is real employment experience:  be the chef, work in a commercial kitchen, and prepare catered events and daily cooking projects each year. 
The curriculum is aligned with any first year, post-secondary culinary arts coursework, including basic cooking techniques, sanitation, storeroom ordering & inventory, stocks, soups & sauces, baking & pastry formulas, ethnic cooking, and cold food preparation, including garnishing techniques.

I earned my Associate of Science degree in Culinary Arts from Johnson & Wales University in Providence, Rhode Island.  I was lucky to work as a cook for Walt Disney World in Florida, where I worked in the only fine dining restaurant on property, The Empress Room.  I was a Garde Manger chef at The Greenbrier Resort in the middle of the mountains of West Virginia.  I moved to Washington DC where I was the sous chef for The Holiday Inn Hotel at Dulles Airport.  My favorite job of all time was being the Chef Garde Manger at The Garden City Hotel on Long Island, New York.  My department was in charge of planning and preparing all of the cold food for the banquet department, three restaurants, and room service.  I made a move to Minnesota and was one of the owner/operators of The Depot Bar & Grill for the next fifteen years.  This high volume, American restaurant is still in business and is one of the finest scratch kitchens in Minnesota.  I have been The Fundamental Chef instructor here since 2004.  I earned my Bachelor's degree in Career & Technical Education from Bemidji State University in 2009 and am currently working on the coursework for a Master's degree in Educational Leadership at St. Mary's University in Minneapolis.
